Wine Cap, Stropharia rugosoannulata and Stropharia rugosoannulata var. lutea are two of the largest edible mushrooms taking on a classic stipitate form. One variety has a wine red cap while the other is yellow. This mushroom grows wild in many temperate regions in mid-spring. In the past several years, this mushroom has become a popular addition to gardens as a mulch composter. The buttons possess many qualities similar to the much revered Porcini mushroom, they are nutty and slightly crispy. The larger mushrooms have a stronger flavor. We prefer the buttons and will always grade this product out for only choice #1 specimens.
