White Chanterelle, Cantharellus subalbidus is a dinosaur in the chanterelle world, farther back than others in the evolutionary tree. This Chanterelle is larger and meatier than any of its golden counterparts with an Umami/Nutty taste that develops more of the signature apricot as the season progresses. This Chanterelle stains with touching or bumping, sometimes giving them a sunburnt appearance, this won’t affect the taste. Superior in flavor to many of the other Chanterelle species.
