Ramps, Wild Leeks or Allium triccocium are ephemeral spring relatives of the better known Cultivated Leek. This plant was a traditional spring food in Appalachia, often the first edible plant to be found in a year, it provided much needed nutrition after a long hard winter. Now this pungent plant can be found on menus all over the country due to a renewed interest in its unique flavor. Often described as a mix of both onion and garlic flavors.
