Miner’s Lettuce, Claytonia perfoliata is an ephemeral spring succulent with a rosette habit and an infinity for cool, damp areas. This crunchy and sweet little herb is most commonly eaten raw, however, it can be treated like spinach and sauteed or boiled. This plant has a traditional use amongst Miners in early spring as a tonic to ward off scurvy, hence the name.
