Lobster Mushroom, Hypomyces lactiflourum is the werewolf of the Mushrooms world. This mushroom starts out as a plain Jane Lactarius or Russula mushroom. When it comes in contact with the spores of Hypomyces, a change begins. First the gills dissolve, then it grows a hard red Lobster shell like exterior. Once the change is complete, you are left with one of the most savory, meaty mushrooms in existence. This mushroom has a mild shell fish flavor with a texture similar to seitan.
