Hen of the Woods, Grifola frondosa is also known as Sheepshead in the rural mountains and valley’s of Pennsylvania. This is one of the traditionally hunted mushrooms in this region with many of the current hunters having been taught by their grandfathers.This mushroom is circumpolar and equally revered in Japan where it is referred to as Maitake (dancing mushroom) due to hunters frequently being seen breaking out into dance. Hen of the Woods is extremely meaty with pleasing nutty/umami finish.
