Fiddlehead Fern, Matteuccia struthiopteris is also known as Ostrich Fern. This species is considered the true fiddlehead and the finest of all of the edible ferns. This ephemeral spring green is a traditional favorite in New England and a long history of consumption amongst Native Americans. Strangely enough, it is also popular in Northern France and Eastern Russia. This fern grows abundantly in North Eastern North America in marshy areas and wetlands. Fiddleheads are high in Omega-3 and Omega-6 fatty acids. Fiddleheads can be steamed, sauteed, boiled, or pickled. They are similar to asparagus in texture with a milder flavor.
