Belly-Button Hedgehog, Hydnum umbilicatum sensu lato is a petite, little know relative of the Chanterelle. For years this was believed to have been related to Lions Mane due to the toothed hymenium. With the advent of DNA we have learned it belongs in the family Cantharellales, you’ll understand once you taste it. It lacks the apricot undertones characteristic of its cousin but its extra umami more than makes up. This is a delightful late fall/winter treat when many of the other mushrooms are long gone.
